Chicken Fajitas

Serves approximately 4 people

 

1 ½ lbs. boneless/skinless chicken, cut into strips

1 large onion cut into long slices

1 red bell pepper cut into long slices

1 green bell pepper cut into long slices

1 – 2 cloves crushed garlic

Vegetable oil

Juice of 2 fresh limes or lemon

Approx. ¾-1 cup liquid (water, white wine or chicken broth)

 

Spices (amounts can be adjusted according to taste)

1 T. ground cumin seed

1 – 2 t. ground Hungarian paprika

1 t. ground red pepper flakes

1 t. dried or 1 T. fresh chopped oregano leaves

 

Saute chicken in vegetable oil until light brown.  Add garlic and peppers, saute until they soften a bit Add spices and mix, add liquid as required to spread spices evenly through the meat mixture.  Cook until liquid has evaporated from the pan.

 

Serve with

 

Soft and hard shell tortillas

Sour cream or crème fraiche

Sliced black olives

Slice jalapeno peppers

Shredded lettuce

Shredded cheddar and/or Monterey Jack Cheese

(If you can find it, Mexican “queso fresco” is really good)

HOT Sauces

 

Variation – Ground Beef Tacos

 

Omit peppers, chop onions into small pieces and substitute 1 ½ lbs. of ground beef for chicken.  Saute onions, garlic and beef together.  Continue with the recipe the same as above, but add 1 T. Tomato paste with the spices.
