Jim's Potatoes

This is a simple but tasty potato recipe named for our next door neighbor in Illinois because he enjoyed them so.

This is best prepared on the upper rack of a gas grill but you could bank the coals of a charcoal grill for indirect heat and yes we have made them in the oven but the flavor is not as robust.

You can use any type of potato you prefer. We mostly use a baking potato or Golden for a richer flavor.

3-4 Cups cubed potatoes skin on (bite size about 1 inch)

Olive oil

Salt & pepper

Thyme

Put the Potato cubes in a 9X11 metal baking pan.  Drizzle enough olive oil over the cubes to coat them when mixed. Salt and pepper to taste. (mixing with hands seems to be the easiest way) Put three or four sprigs of fresh Thyme on top (Dried can be substituted adjust quantity to taste) Bake in the grill for 30-40 minutes stirring occasionally to prevent the bottom from burning.  Your baking pan will acquire a patina from this dish so we have reserved a special pan just for it. (the custody battle still rages when we see Jim)
