Saffron Rice

(Use ½ cup uncooked rice per serving,

 yields approximately 1 cup cooked)

 

 Ratios for 1 cup of uncooked rice:

            ¼ c. onion

1 T. vegetable oil

2 c. liquid (chicken broth or ½ water/ ½ chick broth)

Sugar to taste or include approx. ¼ c. white wine in liquid

            Tumeric and saffron to taste (also for color)

            Salt and pepper to taste

            ¼ cup frozen peas (optional)

 

Saute onions in oil until they become translucent.  Add rice and stir until all grains of rice have been coated with the oil.  Add the liquid and spices and bring to a boil.  Turn heat to low, cover and cook as you would normally cook rice.  If adding peas add at the end when rice is almost done, stir them in and cover until the peas and warm.

 

Note:  If you don’t want to make this rice from the recipe, both Knorr and Near East brands make a good “in the box” substitute.
