Twice-Baked Sweet Potatoes (Yams)

1 large sweet potato per two people (as a side dish)

Per potato add:   1 T. melted butter

                             To taste:           Salt

                                                Pepper

                                                Grated orange peel

                             1 t. – 1 T. brown sugar (depending on potatoes)

 

Bake potatoes at 350F degrees until tender (approximately 40-60 minutes).  Peel potatoes and discard peel.  Mash and mix with remaining ingredients.  Spoon (or pipe with a pasty bag) into individual oven-proof containers.  If you pipe the potatoes, refrigerate them first for a firmer texture and more prominent pattern.  Potatoes can be refrigerated at this point one day in advance of serving.  Re-heat in oven before serving until hot.
