Bruschetta

This recipe requires all fresh ingredients because they are very important to the flavor.  You will be disappointed if you substitute any of the fresh items.

 Good “crisp-crusted” baguette-style Italian or French bread

Garden-fresh ripe red tomatoes

Garlic cloves, peeled

(Note: 2-3 cloves should be enough for an entire loaf of bread)

Extra-virgin olive oil

Fresh basil leaves chopped

Parmesan cheese – freshly grated

 

Slice bread into 1 – 2 inch slices (personal preference).   Grill bread until toasted.  Rub garlic lightly on toasted bread while it is still warm.   Set aside.  Peel (personal preference and depends on the tomatoes), seed and coarsely chop the tomatoes.  Toss in olive oil.   Spoon tomatoes and olive oil on top of bread.   Sprinkle with fresh basil leaves, grate parmesan cheese on top.  Serve.
