1Navy bean soup Master Chef: Mireya L. Milanes (10K gif)

Navy Beans Soup (Potage frijoles blancos)

  • One pound Navy bean (frijoles blancos pequenos)
  • 1/4 pound ham shopped in bites sizes
  • One Spanish sausage (chorizo)
  • One blood pudding (morcilla espanola)
  • One big onion, finely minced
  • One bell pepper, finely minced
  • Two garlic cloves, finely minced
  • Two cilantro leaves, finely minced
  • One tsp salt
  • 1/8 cup olive oil
  • One bay leave
  • One tsp of ground black pepper
  • 1/4 cup white wine
  • One big potato cut in bite size pieces
  • Three cups of water

Soak the beans in water overnite. Drain the water and add three cups of fresh water, add cilantro. Bring it to a boil and then simmer at low temperature. In a cooking pot, put the olive oil, onions, garlic and bell pepper , saute it. Add ham, chorizo and morcilla (cut in bite size pieces),bay leave, ground black pepper and wine, saute for few minutes and set aside. Add the ham-sausages mixture with the potatoes to the simmering beans. Bring it to boil, stir well and finish cooking at low temperature until beans are done to your taste.

Flan de Leche

  • One can condensed milk
  • One can evaporated milk
  • 5 eggs
  • One tsp of vanilla

Beat all the ingredient in the mixing bowl until blended. Pour the mix into the caramel-lined mold, and set mold in a deep saucepan. Pour boiling water around the outside of the mold. Bring to the simmer on top of the stove,for one 1/2 hours. Custard is done when it begin to shrink from the sides of the mold. A little circle in the center of the Flan remain creamy. Remove mold from water, let cool, then chill for 3 to 4 hours.

3Ground meat in souce (picadillo,arroz y yuca) Master Chef: Mireya L. Milanes (10K gif)

Ground Meat in Tomato Sauce (Picadillo)

  • One Pound lean ground beef
  • 1/4 pound ground ham
  • 1/8 cup olive oil
  • One big bell pepper, finely minced
  • One big onion, finely minced
  • Two garlic cloves, finely minced
  • 1/4 cup capers
  • 1/4 cup minced olives
  • One tsp of salt
  • 1/4 tsp ground black pepper
  • 8 oz tomato sauce
  • 1/2 cup white wine
  • One big potato diced small

Put olive oil in a cooking pan, add garlic, onions, bell pepper, saute. Add ground ham and beef, mix and browned, add the ground black pepper, salt , capers, minced olives and tomato sauce. Add diced potatoes and wine, simmer until potatoes are done. Garnish with red pimientos and sweet peas. Serve hot with white rice and yuca con mojo.

Panetela

  • One pk Butter Recipe Golden
  • 8 Oz sour cream
  • 2/4 cup oil
  • 1/2 cup sugar
  • 4 eggs
  • 2 teaspoon brown sugar
  • 2 teaspoon cinnamon

In a Cooking bowl put the cake mix, sour cream, oil, sugar and eggs, mix well. In a large Savarin, smear the bottom and sides of the pan with butter, add half of the above mix and sprinkle the mix of cinnamon and brown sugar, then add the rest of the mix. Bake at 350 degree for 45 minutes.

Black Bean & Rice (Moros con Christianos)

  • 1/2 pound black beans
  • Five cups of water
  • One bell pepper, (cut in four pieces)
  • One big white onion, finely minced
  • 1/2 pound ham, cut in bites sizes
  • 1/3 cup olive oil
  • Two garlic cloves, finely minced
  • One bay leave
  • Three tsp of salt
  • 1/4 tsp oregano
  • One pound rice (we use Uncle Ben)
  • 1/2 pound of bacon (fried)
  • 1/2 can of red pimientos

Wash the beans very well and soak them overnite in the five cups of water, with the bell pepper. Cook the beans in the same water until tender. Strain the beans and set the water aside. Saute in the olive oil, the onion,garlic,bay leave,oregano and ham. Add the beans rice and four cups of the water in which the beans had been cooked. Cook with low temperature until done. You may add more water if necessary to soft the rice. Garnish with red pimientos and the fried bacon.

Black Beans Soup (Potage de frijoles Negro)

  • One pound Black beans
  • Eight cups of water
  • 1/2 pound of lean pork meat, cut in bites sizes
  • Two pork shops, cut in bites sizes
  • One big bell pepper,cut in four pieces
  • One big white onion, finely minced
  • Three garlic cloves, finely minced
  • Three tsp of salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp oregano
  • One bay leave
  • Two tbp of sugar
  • Two tbp of vinegar
  • Two tbp white wine
  • Two tbp olive oil

Wash the beans very well, soak overnite with the four pieces of bell pepper. In a cooking pot bring the beans in the same water to a boil and then simmer almost until they are done. In a fried pan, put the olive oil with the pork meat and the pork shop, cook them until done, add the rest of the ingredients to the pan and cook until well done, then add the mixture to the boiled black beans and simmer them with low temperature until beans are soft. In the moment of serving add more olive oil.
