Crawfish Fettuccini 

Ingredients

   

3 lbs.

Crawfish tails

2

Bell peppers, chopped

4 Tbsp.

Parsley flakes, or chopped parsley

3 ribs

Celery, chopped

3

Large onions, chopped

1 lb.

Pepper Jack cheese, cubed

 

 

3 cloves

Garlic, chopped

3 sticks

Margarine or butter

¼ cup

Flour

1 pint

Half & Half

16 oz.

Fettuccini or egg noodles

4 oz.

Fresh Parmesan Cheese, grated

 Melt margarine in large skillet; add bell peppers, celery, and onions. Sauté until tender. Add parsley, garlic and crawfish; simmer for 10 minutes. Add flour, half & half, and ½ of cubed pepper cheese. Simmer for 10 minutes; stir often while cheese melts. Cook noodles according to package direction; drain. Mix the cooked noodles with the sauce; pour into 5 quart baking dish. Top with the rest of the cubed cheese and grated Parmesan cheese. Bake at 350°F. for 20 minutes.
