Seafood cornbread

 

1-cup               corn meal

1-cup               milk

1/2-cup            oil        

2                                            eggs (beaten)

½   tsp.            Salt

15  oz.             Cream style corn

16  oz.             Mild cheddar cheese (grated)

1    large          onion (finely chopped)

1    lb               crawfish or shrimp or crab (peeled and/or shelled)

1   small           container cottage cheese

2                                           Jalapenos (very finely chopped-optional)

 

 

 

Mix all of the ingredients together in a large mixing bowl. Pour into greased 9” x 13” baking pan. Bake at 350° for about 50-60 minutes. Toothpick will come clean from center when fully baked.
